Banana Egg Muffins

About the recipe:

I definitely cannot take credit for this recipe. TONS of people make banana egg pancakes. I love making them into pancakes but it is less time consuming and easier for meal prep to make them into muffins!

RULE OF THUMB: 2 eggs for every 1 banana!

Equipment:

  • Bowl with spout (preferably)

  • Large fork

  • Measuring spoons

  • Muffin pan (12 muffins)

Ingredients:

  • 4 Bananas (preferably over-ripe)

  • 8 large eggs

  • 2 Tbsp cinnamon

  • 1/2 tsp. salt

  • Butter (for coating muffin pan)

    Steps:

  1. Pre-heat oven to 375*F

  2. Butter muffin pan generously

  3. Peel all bananas and place them in your bowl

  4. Mash all bananas with a form, thoroughly.

  5. Add cinnamon and salt, mix.

  6. Add all 8 eggs, mix thoroughly until everything is evenly blended.

    You could add everything to the bowl and then mix but I find mixing the cinnamon into the bananas before the eggs are added is MUCH easier to incorporate.

  7. Pour batter evenly into your muffin pan (they may be pretty full depending on how big the bananas were so you might want to add a baking sheet on a lower rack to catch any butter dripping.

  8. Bake for 18-20 minutes.

  9. Let cool and use a butter knife to loosen all sides and remove if you wish, or just place the whole muffin pan in your fridge like I do!

Changes/Substitutions

You can add blueberries by placing 4-5 in each mufin.

You could add 1/4 cup flour of your choice.

You could add sugar/maple syrup/honey if you wish, although I think adding it on top after baking is better.

You can add other spices. One time I ran out of cinnamon so I added my homemade pumpkin pie spice instead!
